Crispy Lemon Garlic Chicken Thighs


  • 4 chicken thighs (with skin)
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes (optional)
  • Fresh thyme or rosemary (optional)
  • Sliced lemons and fresh herbs for garnish


  1. Preheat the oven to 200°C (400°F).
  2. Wash and pat dry the chicken thighs, then place them skin-side up in a baking dish.
  3. In a bowl, mix together lemon juice, minced garlic, olive oil, salt, black pepper, and optional red pepper flakes.
  4. Brush the chicken thighs with the prepared mixture.
  5. Place sliced lemons between the chicken thighs and garnish with fresh herbs, if desired.
  6. Roast in the preheated oven until the chicken is golden brown and reaches an internal temperature of 75°C (about 40-45 minutes).
  7. Transfer the roasted chicken to a serving plate, garnish with additional fresh herbs, and serve hot.
