- 4 chicken thighs (with skin)
- Juice of 2 lemons
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt

Instructions:
- Preheat the oven to 200°C (400°F).
- Wash and pat dry the chicken thighs, then place them skin-side up in a baking dish.
- In a bowl, mix together lemon juice, minced garlic, olive oil, salt, black pepper, and optional red pepper flakes.
- Brush the chicken thighs with the prepared mixture.
- Place sliced lemons between the chicken thighs and garnish with fresh herbs, if desired.
- Roast in the preheated oven until the chicken is golden brown and reaches an internal temperature of 75°C (about 40-45 minutes).
- Transfer the roasted chicken to a serving plate, garnish with additional fresh herbs, and serve hot.
