Lemon Dill Salmon with Roasted Vegetables

For Salmon:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • Lemon wedges for serving

For Lemon Dill Sauce:

  • 1/2 cup plain Greek yogurt
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

For Roasted Vegetables:

  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste


  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil, sprinkle with dried dill, salt, and pepper. Bake for 15-20 minutes or until the salmon is cooked through and flakes easily.
